Pistachio Almond Pancakes

Ingredients
2 cups whole wheat flour2 tbsp cooking stevia2 servings benefiber powder1/2 tsp salt1 tsp baking powder1 tsp baking soda1 cup unsweetened soy almond milk1/4 cup skim milk2 large eggs (separated)1/4 cup I can't believe it's not butter (melted)pam cooking spray1 packet sugar free pistachio almond pudding mix1/4 cup grapefruit juice
Directions
1. Combine flour, salt, stevia, 1/2 packet of pudding, baking powder, baking soda, benefiber powder in a bowl.

2. In a separate bowl mix together milk, almond milk, egg yolks, and melted butter, 1/4 cup squeezed grapefruit juice.

3.Carefully blend in dry ingredients.

4. In a mixer or separate bowl, beat egg whites till stiff peaks form.

5. Fold in egg whites to separate ingredients until combined.

6. Scoop 1/4 size batter onto skillet and cook 2 mins on each side.
