Wrenja's Gazpacho

Ingredients
2 14oz cans of diced tomatoes1 medium english cucumber1/4 C stale bread, torn up, crust removed4 T olive oil5 cloves garlic (large)1-2 T red wine vinegarChipotle powder to tastesalt & pepper to tasteGarnishes:shredded chickenAvocado slices
Directions
1. If your blender cannot handle the full amount work in batches. Otherwise pour the 2 cans of tomatos, 4 T olive oil and the stale bread into the blender and puree.

2. Chop the cucumber into pieces, add with garlic, vinegar, and seasonings. Puree.

3. TASTE. Adjust seasonings as necessary until you feel it has the right flavor. Remember, as you let the gazpacho rest, the flavors will intensify as they begin to meld together.

4. Chill in the fridge for 4 hours, or up to 24. Enjoy with sliced avocado, shredded chicken, or your favorite condiments.
