Creamy Spinach

Ingredients
2 lbs fresh spinach2 T coconut oil1 med. onion, chopped1 clove garlic, minced1/2 cup 2% milkpinch of nutmegsea salt and pepper to taste
Directions
Bring large pot of salted water to boil. Add spinach to pot and boil for 1 minute.
Drain spinach, and press out excess water. Chop the cook spinach.
Using the same pot, heat the oil over medium-high heat and cook the onion and garlic in the cooking fat until the onions are soft, appx. 2 min.
Add the spinach and stir everything together, for about another 2 minutes.
Pour the milk into the spinach stir and season with salt, pepper and nutmeg.
Continue cooking, to reduce by half into the milk, appx. 4 minutes
