Paleo crepes

Ingredients

3 eggs beaten1/2 cup almond or coconut milk, plain2 teaspoons vanilla extract (omit for savory fillings)2 tablespoons tapioca starch2 tablespoons coconut flour2 tablespoons ground flaxseed meal
In small bowl mix eggs, milk and vanilla. Beat until completely blended.
In mixing bowl, whisk together dry ingredients.
Pour wet over dry ingredients and whisk until smooth. There should be no lumps.
Heat crepe pan or 10" saute pan. Oil with coconut oil. Pour scant 1/4 cup of batter or amount needed to cover bottom of pan. Swirl to cover pan and assure an even coverage. When edges start to curl in, gently flip and brown on other side.
Fill and eat immediately or save for later by placing wax or parchment paper between crepes.
Suggested fillings:
-Chocolate chips and walnuts
-Chopped strawberries and whipped cream
-Fruit preserves
-Any chopped fruit
-Your favorite filling
-If vanilla omitted, can be used in place of tortillas.
