Lamb & Beef Chili

1 lb. Ground Beef1 lb. Ground Lamb1 Large Onion, chopped1.5 to 2 lbs. Crimini Mushrooms, sliced/chopped28 oz. Can Diced Tomatoes.25 cup Minced Garlic6 oz. Can Tomato PasteOptional Spices:CuminSmoked PaprikaChili PowderLiquid SmokeSaltPepper
Cook onions about 5 minutes in a cast iron pan. Add mushrooms and cook until tender and water has evaporated.
Remove mushrooms and onions from the pan. Add lamb and beef and brown. Drain fat from the meat.
Add all ingredients to a slow cooker and stir. Add spices to taste. Cook for 6 to 8 hours on low or 3 to 4 hours on high.
Serve with shredded cheese, sour cream, and hot sauce, if desired.
