Tomato-Basil Aioli

Ingredients
1 sun-dried tomato* or 1 tablespoon chopped roasted red pepper 1 tablespoon fat-free Greek yogurt1 tablespoon chopped chives 1 tablespoon chopped basil 1 teaspoon lemon juice* If using jarred sun-dried tomatoes, opt for those packed in water. You could also use 1 teaspoon sun-dried tomato paste.
Directions
Place the tomato in a small dish and cover with hot water. Steep for three minutes, then drain and chop.
Combine the chopped tomato with the remaining ingredients and refrigerate or use immediately.
