Apple Lemon Poppyseed Baked Oatmeal (vegan)

1/4 c rolled oats2 tbsp fiber bran cereal1 tbsp vanilla Sun Warrior protein powder1 tsp lemon peel/zest1 tsp poppy seed1/4 c almond milk1 tbsp water3 tbsp applesauce1/4 tsp cinnamon2 packets stevia/truvia1 vial vanilla stevia (liquid)
Preheat oven to 375F.
Mix all ingredients in a bowl until well-blended. Pour into a greased mini-loaf pan and bake for 20-22 minutes, or until browned; then broil for an additional 3-4. Let cool before removing from pan (or else it will fall apart). Enjoy!!
