Quinoa Quiche Cups

2 cups cooked quinoa1 cup egg whites2 whole eggs2 cups fresh mixed vegs (spinach, zucchini, mushrooms)1/2 cup shredded reduced fat swiss or cheddar cheese1 Tbsp. Frank's hot saucesalt and pepper to tasteLightly grease mini-muffin pan. Mix egg whites with eggs. Add remaining ingredients. Place in mini-muffin pan.
Bake in 350 oven, 40 minutes. Let rest in pan 10 minutes. Remove from pan. Serve and/or freeze.
