Spicy Peanut Noodles

Ingredients
10 oz spaghetti, linguini, or similar1/3 cup hot water1/3 cup smooth peanut butter2 teaspoons reduced-sodium soy sauce2 teaspoons vinegar (I use white wine or rice vinegar)2 scallions, finely chipped, divided2 cloves garlic, very finely minced1 teaspoon sugar½ teaspoon hot re pepper flakes, or more, to taste
Directions
Cook the pasta in boiling water it is al dente. Drain the pasta, set it aside, and keep it warm. Meanwhile, in a medium bowl, blend the water and peanut butter. Stir in the soy sauce, vinegar, all but 1 tablespoon of the scallions, garlic, sugar, and hot pepper flakes. Combine the sauce with the hot spaghetti in a heated serving bowl. Garnish the dish with the 1 tablespoon of reserved scallions.

    I made this tonight and my husband loved it! It tasted great with a hint of peanut butter. We ate it with the Pong Pong Pork Chops. They went perfectly together because the Pork Chops were spicy and the noodles helped to tame it down a little. - 6/13/08

    This was very good - we liked it; a bit dry but I suspect that was my fault (accidentally let the sauce and noodles cool too much). I also added boneless chicken breast meat to it, and some snap peas. Other than it being dry/sticky, it was very good. - 2/5/08
