Ingredients
3 large eggs1/8 cup rice milk1/4 chopped tomatoes
Directions
1. Chop tomatoes

2. Whisk eggs and rice milk together in bowl.

3. Heat skillet using your favorite cooking spray or oil.

4. Pour eggs mixture and tomatoes into skillet.

5. Stir the eggs, making sure to scrape the bottom of the pan at all times, until eggs are solid and no liquid remains.

This makes 1 serving, great for those who are single.
