Homemade Honey Wheat Bread

5 tsp active dry yeast1/4 cup warm water1/2 honey1/4 spreadable butter with canola oil2 tsp salt2 1/2 cups hot water4 1/2 cups whole wheat flour3 cups all purpose flournon stick spray
In a large bowl dissolve the yeast in the warm water. Mix in the honey, butter, salt and hot water. Using an electric mixer on low beat and add in half the whole wheat flour for 1 minute. Scrape the sides of the bowl, add in remaining wheat flour and beat on medium 2 minutes. With a wooden spoon stir in 2 cups of the all purpose flour and mix until the dough pulls away from the bowl. On a floured surface knead the bread adding more flour as needed. Knead 5-10 minutes until the dough is springy and smooth. Spray a large bowl with non stick spray. Spray all sides of the dough with non stick spray. Place dough in the bowl, cover and allow to rise in a warm place about 45 minutes. Dough should double in size. Grease 2 loaf pans. Press the dough to deflate then separate into 2 halves. Shape into loaves and place in pans. Cover and let rise about 30 minutes until loaves double in size. In a 375 oven bake loaves uncovered 30 minutes. Reduce heat to 350 and bake 10-15 minutes. The bread will sound hollow if tapped. Remove from pans and allow to cool before cutting.
