Coconut Pie

Ingredients
Crust:2 Sheets Honey Maid Low Fat Graham Crackers, crushed fine1 packet sweetenerdash salt1 Tbsp Land O Lakes Light Whipped ButterFilling:Large Box (6 servings) Jello Sugar Free Fat Free Vanilla Instant Pudding Mix2 Cups Nonfat Milk1/2 t coconut extractTopping:8 Tbsp Cool Whip Free20g Coconut Meat, Unsweetened and Toasted
Directions
On a baking sheet place coconut meat. Toast in oven until golden brown. Keeping a close eye to make sure that the meat does not burn.

Crush graham crackers with a large can. Mix in sweetener and salt. Melt butter and combine with crumbs. Divide between 2 bowls.

Combine pudding mix with milk and extract. Mix well. Pour pudding mixture into crust. Top with cool whip and toasted coconut meat.

Chill for a couple hours.
