Crispy Oatmeal Cookies

1 stick butter, softened (1/2c)1/2 c canola oil1c brown sugar1/2c white sugar1 egg2 tsp vanilla1/2 tsp cinnamon (more or less)1 tsp baking soda1 1/2 c whole wheat flour1/2 c AP flour2c old fashioned oatmeal1 c banana chips, broken into smaller pieces1c cranberry raisins
Beat butter, oil, sugars & egg together until thoroughly combined and color lightens. Add vanilla, cinnamon, baking soda and flours to make dough. Stir in oatmeal, banana chips and cranberries.
Preheat oven to 375. Scoop onto silpat or parchment. Squash gently with your hands for a crisper cookie. Bake 10 min (if using the small scoop mentioned above. Larger cookies will need more time). Cool on racks.
Serving Size: Makes 88 cookies using a 1" diameter cookie scoop
