Lemony Chick Peas w/ Garlic & Arugula

Ingredients
1 can *Chick Peas (drained & rinsed)2 Tbls. Olive Oil3 cloves garlic, chopped1 tsp. garlic powder (for garlic lovers!)1 tsp. lemon zest1/4 to 1/2 c. lemon juice (approx. 1 lemon)4 cups arugula (cleaned & dried)Black pepper to taste
Directions
Heat olive oil over medium high heat. Saute chick peas, garlic & lemon zest. When garlic starts to turn light brown (about 5 minutes), add lemon juice. Lower heat & simmer 5 minutes. When done, place arugula on separate plates & top w/ chick pea mixture. Garnish w/ crushed black pepper.
Serves 4.
* You may use dried garbanzo beans & cook them yourself, keeping in mind it adds considerably to cook time, but lowers sodium intake.
