potato leek soup (per cup)

Ingredients
3 leeks (or 2 very large ones) diced1800ml of no salt added chicken broth12oz potatoes (cubed)2 chicken breast (cut in half lengh wize)2 onions diced1/4 cup of buttersalt and pepper to tastea touch of cayenne pepper (optional)
Directions
make sure to start by cleaning your leeks properly

then chop or cut ingredients as per the list

put your pot on the stove med high, melt the butter

then add the leeks and onions, stir and cook until transluscent about 5-10 min,

Add the potatoes and the broth, stir then put in your chicken,

put the temperature on max once it starts to boil stir and lower temp to medium low,

let simmer for 30 min, stir, then let simmer another 30 min

take out chicken, and put asside

blend the soup, cut chicken into bitesize pieces, put back in pot stir and enjoy
