Skinny Baked Tater Tots

Ingredients
8 Potatoes (russet are best) peeled and diced1/4 cup Milk-I use Almond, plain but you can use any type1 cup flour3 eggs, beaten1/4 teaspoon cayenne powderSalt and pepper to taste2 cups potato chips (crushed)
Directions
Boil potatoes about 20 minutes. Drain and return to pot. Add milk and seasonings and mash. Don't add all the milk at once because you may not need it all. The final consistency should be a little lumpy and dry (for ease of shaping). Put eggs, flour and potato chips in 3 separate plates. Form the potato mixture into balls. Then dip each piece into the egg mixture, flour and chip crumbs, in that order, and shape them into the tot formation. Place on baking sheet. Bake for 12 to 15 minutes until crispy and golden brown.
