Al the Kat's Shrimp Fajitas

1 1/2 lbs shrimp peeledJuice of one lemon3 or more garlic cloves crushed or pressed1 tsp Old Bay Seasoning1 tsp olive oil1 medium onion sliced1 medium pepper sliced 1 tbsp cumin seed1 tbsp coriander seed2 tsp olive oil
Combine lemon juice, crushed garlic, Old Bay seasoning, and 1 tsp olive oil. Peel shrimp and let marinate in the mixture for about 15 minutes.
Heat pan and put remaining 2 tsp of olive oil in. When oil is hot saute onions and peppers for about 5 minutes, until soft. Grind cumin & coriander in a coffee grinder and add powdered spices to pan with onions and peppers. Saute for a minute or two and then add shrimp and marinade to pan. Cook shrimp till they turn pink.
Serve with whole wheat flour tortillas and any other fixings you like. We like brown rice, salad veggies, salsa, cheese and or light sour cream.
