Lamb Chops Ratatouille

Ingredients
Lamb Chop, 5 oz 1/2 cup Zucchini, sliced 1/2 cup Eggplant, cubed1 tbsp. Onions, chopped 1/4 cup Tomatoes, chopped1/2 Clove garlic, choppeddash of Thymedash of basilsalt and pepper
Directions
Place lamb chop on a square of aluminum foil. Top with remaining ingredients. Bring ends of foil together and loosely fold to form package with opening at top to allow steam to escape. Bake in a 350 degree oven for 1 hour or until meat is tender. If desired, meat and vegetables may be baked in a covered baking dish.
