Wholemeal Raspberry and Banana Muffins

Ingredients
250g wholemeal flour1tsp baking powder50g rolled oats100g unsalted butter75g sugar2 eggs200ml semi-skimmed milk (1%)125g raspberries2bananasjuice of 1/2 lemon
Directions
In one bowl mix flour, baking powder, oats, raspberries, mashed banana and lemon juice.

In a second bowl mix sugar, melted butter, eggs and milk.

Add wet ingredients to dry ingredients and stir.

Spoon into 12 muffin cases.

Cook for 25 minutes at 200C/400F/Gas Mark 6

1 muffin is one serving. Great for grabbing a quick breakfast with fruit and fibre.
