Rhubarb and Cherry Whole Wheat Oatmeal Muffins

Ingredients
organic quinoa flour, 0.5 cupWheat flour, white, bread, enriched, 2 cupBaking Powder, 1 tspBaking Soda, 1 tspSalt, .5 tspYogurt, plain, low fat, 1 cup (8 fl oz)Brown Sugar, .25 cup, packed*Canola Oil, .5 cupEgg, fresh, 1 largeVanilla Extract, 2 tsp*Rhubarb, .5 cup, dicedOats, 1 cupSweet Cherries, .75 cup, without pits
Directions
Preheat oven to 375

Mix together first five ingredients in mixing bowl and set aside.

In a separate bowl whisk yogurt, sugar, oil, egg and vanilla until well blended and sugar is completely dissolved. Slowly add to dry ingredients, mixing in between each addition. Stir in rhubarb & cherries.

Spray muffin tins with non-stick spray and fill each 2/3 with muffin mix.

Bake 15 minutes.
