1-1/2 cups unsweetened shredded coconut3 egg whites1/4 tsp vanilla extract Dash of salt1 tbsp honey1 tsp steviathe fibre from 1/4 cup unsweetened applesauce1/2 to 1 tsp of cinnamon (to taste)
Beat egg whites and dash of salt until soft peaks form. Gradually add in honey and stevia while beating until peaks are stiff and glossy.
Fold in coconut.
Drop by rounded teaspoon onto greased baking sheet.
Bake at 325*F 18-20 minutes until set and very slightly browned.
Center will still be soft.
