Potato Salad with a Sweet Twist

5 large hard boiled eggs, chopped6 potatoes with skin, cooked, chopped1/2 bunch green onions, chopped3/4 cup fat free mayonaise 7 oz. fat free sweetened condensed milkFresh parsley for garnish, optional
Boil potatoes in salted water until tender. Meanwhile, in a small bowl, combine mayonaise and sweetened condensed milk. Set aside. When potatoes are tender, drain water, cool slightly by rinsing with cold water, and chop potatoes. While still eggs and potatoes are still warm, gently mix chopped eggs, potatoes, and green onions. (The flavors blend better when they are mixed warm and then chilled.) Pour milk mixture over potato mix. Stir gently until well coated. Refrigerate for at least 2 hours. Garnish with parsley before serving.
