Blue Cheese, Walnut, & Cherry Salad

Ingredients
1/4 cup chopped walnuts8 oz chicken breast, skinless, cut into small strips or cubes1/4 cup crumbled Roquefort (blue) cheese4 tablespoons blue cheese dressing1/3 cup fresh cherries, pitted and diced1/4 cup finely chopped celery1/2 cup firmly packed arugula4 cups of fresh spinach
Directions
Preheat Oven to 350 degrees.

Spread walnuts on a baking sheet, baking until aromatic and shiny (about 10 minutes). Remove and allow to cool.

Heat large nonstick skillet over high heat (add cooking spray or oil if necessary to prevent sticking). Cook chicken until cooked through (about 3-5 minutes) stirring occasionally. Let cool, if you prefer.

Mix together cheese, dressing, cherries, and celery. Add chicken, then toss with spinach.

Divide and enjoy!
