No Sugar Added, Lactose-Free Tapioca

Ingredients
2 3/4 cups 2% Lactaid or 2% no lactose milk3 tbsp tapioca pearls (Minute Tapioca)1 egg lightly beaten1/3 cup Splenda or other preferred no-calorie sugar substitue1 tsp vanilla
Directions
1. Put all ingredients in a medium pot EXCEPT vanilla and let sit for 5 minutes.
2. Turn burner on medium and cook, stirring constantly, until it comes to a boil. Remove from heat.
3. Stir in vanilla
4. Pour into a large bowl or into 1/2 cup dessert cups and let cool to desired temperature.
5. Serve warm or cool. Be sure to refrigerate any uneated portions
