4 small chopped onions2 bell peppers, chopped200g sliced mushrooms200g french beans3 cloves garlic, crushed2 teaspoons minced ginger root2 teaspoons minced red chilli400g Beef tenderloin, or other cut into bite size pieces2 cups Beef stockSalt and black pepper, to taste100g yogurt, low fat2 teaspoons vegetable oil
Saute chopped vegetables in oil. Add beef and spices and cook on high in slow cooker for one hour. Add stock, beans, seasonings, and yogurt. Stir and cook on high for one hour then turn down to low and cook overnight. Serve with pasta, rice or new potatoes.
