Goudreau Vegetable-Tofu Scramble

Ingredients
Step One (saute together)~1 med. yellow onion, diced~2 tsp minced garlic or 3-4 cloves~1 diced bell pepperStep Two (crumble & stir in)~1 box (16 oz) extra firm silken tofuStep Three (add & saute)~1 C spinach leaves~1/2 tsp turneric~1/2 tsp paprika~1 tsp cumin~2 Tbsp nutritional yeast~Salt & pepper to taste
Directions
Saute onion, garlic, pepper (& mushrooms, optional) on medium high for 5 minutes or until onion starts to brown

Crumble tofu into pan and stir

Add all other ingredients and saute 5-8 minutes until tofu is bright yellow and hot throughout. Salt and pepper to taste
