Denver Scramble

Ingredients
8 eggs 1/2 cup chopped onion1/4 cup chopped green bell peppers1 cup diced ham2 tbsp butter3 slices American Cheese 2%salt and pepper to taste
Directions
heat skillet over med. heat and add butter to melt. Add ham to skillet and brown. Once ham is to desired color add onions and peppers. (I like mine crunchy so I do not cook mine much. For softer veggies they can be added before ham is brown) Once veggies and ham are heated add eggs over meat mixture, salt and pepper, and smash up the eggs to scramble them. Once eggs are almost cooked through add cheese slices on top and cover, continuing to cook for an additional 2-3 minutes.
