Potato soup with leak

6 cups of Vegetable broth (you can use whatever broth you want but I use vegetable broth)4 medium potatoes, peeled and cut in 1-inch pieces (4 cups approx.)2 large onions, chopped (2 cups approx)6 leeks, chopped1 teaspoon dried oregano 3 tablespoons fresh parsley, chopped1 Avocado, puréed2 tablespoons margarine
Heat the broth in a saucepan or large pot over medium-high heat. Stir the potatoes, onion and leeks in the saucepan. reduce the heat to low. Cover and cook for 20-minutes.
Using a potato masher (I used my blender) mash the potatoes in the broth until it becomes a coarse textured soup. Add the oregano. parsley, avocado and margarine and cook for 5 minutes, stirring often.
Serving Size: makes 12 1 cup servings
