Sweet potato and leek soup

Ingredients
1 pkt 10oz spinach1 3/4 pints stock made from stock cubes - you can use chicken for a fuller flavour3 sweet potato- cubed3 leeks -halved and sliced
Directions
Cube sweet potato into even sized pieces. Cut leeks in half lengthwise, then slice across. Make up stock using either vegetable stock cubes or chicken stock cubes to your choice.

Place spinach, sweet potato, leeks and stock into heavy bottomed pan and bring to boil. Simmer for
approx 10 mins, untill potato is soft. Allow to cool slightly then blend until smooth.Add salt and pepper to taste and enjoy.
