Nice, Hearty Vegetarian Soup Nice, Hearty Vegetarian Soup

Ingredients

    1 large onion, chopped
    3 stalks celery, chopped
    3 cloves garlic, minced
    2 tbsp. Olive Oil
    1 28 oz can whole peeled tomatoes, cut up with juice
    2 tbsp. parsley
    1&1/2 tsp. basil
    1/2 tsp oregano
    1/8 tsp black pepper
    1 bay leaf
    5 cups vegetable broth
    1/4 cup broken spaghetti (Whole Wheat if you've got it!)
    2 cans beans (I like cannelini beans and dark red kidney beans)
    2 cups desired veggies (I use zucchini and carrots)

Directions

1. In large pot, cook onion, garlic & celery in olive oil until soft

2. Add tomatoes with juice, parsley, basil, oregano, pepper & bay leaf. Add broth.

3. Bring to a boil, then reduce heat. Cover & simmer for 50 minutes, stirring occasionally.

4. Add veggies. Simmer, covered 15 minutes.

5. Add spaghetti & kidney beans, cook another 15 minutes.

6. I usually love this with some crusty French Bread and some Boursin, but I guess that's how I wound up at Spark People in the first place. Hope you enjoy this recipe as much as I do!

    Made this soup with crushed tomatoes because that was all I had. I also added about a tablespoon of herbs de provence. The soup was very rich tasting (you might think that there was meat in it if no one told you differently) and it made a ton! Will definitely make again and again. Thanks! - 2/26/09

    This is great! I made a couple of alterations: I added 1/2 can tomato paste for more flavor & added a handful of fresh bagged spinach to the pot at the end. For pasta, I used a 1/4 cup whole wheat macaroni, because that's what I had, & it's wonderful. Filling, hearty, diet- friendly comfort food. - 1/11/09

    Great recipe. I added 1 cup mushrooms, stalk of kale chopped up and a serranto pepper for a little extra spice. Also add 1 lb ground turkey for my husband....he loves meat and hoping he doesn't even realize it's turkey! Ended up adding additional broth and small can of tomato paste. Awesome! - 4/4/09
