Cheesy Rice Stuffed Peppers

Ingredients
4 red sweet bell peppers2 cups cooked brown or white rice3/4 c. 2% shredded cheddar cheese1/2 c. chopped, raw onions1 tblsp chopped fresh parsley1 tblsp chopped fresh cilantrosalt & pepper to taste
Directions
Cut tops off peppers and hollow out seeds and core. Set in boiling water for 10 minutes and steam. Meanwhile, mix remaining ingredients-reserving a little cheese. Fill peppers evenly and place in baking dish. Sprinkle with reserved cheese. Bake for about 25-30 minutes until hot thru.
