Chicken Croquettes w/ white sauce

Ingredients
3 Cooked (boiled) bonless chicken breast3 Tbsp. Boiling Water1 Chicken bouillon Cube1/2 cup Light Mayonnaise1/2 tsp. salt1 tsp Onion powder 1 Cup soft bread crumbs1/4 cup dry bread crumbsWhite Sauce1 1/2 Cup Fat free Half and Half1 tsp Black pepper1/2 cup 2% milkfat cheddar cheese1/3 cup Whole wheat flour3/4 cup 99% fat free chicken broth
Directions
Makes 12 servings

Dissolve Bouillon cube in water. Combine Mayonnaise, salt and onion powder stir in bouillon. Grind Chicken in food processor and add soft bread crumbs. add mayo mixture to chicken. Shape into 12 medium croquettes and dip into dry bread crumbs.

WHITE SAUCE
whisk together flour and chicken broth together in a medium sauce pan over medium heat. Add fat free half and half and pepper. Bring to a boil until thick (about 5-10 min) stirring constantly witha whisk. Remove from heat and add cheese stir until cheese melts.

Place over Croquettes


place on ungreased baking sheet and bake at 450 degrees for 15 min top with white sauce.
