Low Fat Zucchini Dip

1 medium zucchini1 tblsp sugar1 tblsp low sodium soy sauce1 clove of garlic3/4 tsp dried oregano"Pho Mayo"2 Cups Greek Yogurt 1 1/2 tsp Onion Powder1/2 tsp Worcertiershire Sauce1/2 tsp dry mustard3 tsp sugar
Combine Yogurt, onion powder, wochertiershire sauce, and dry mustard. Taste and adjust seasoning until it tastes like mayo.
Shred your zucchini and place in a microwave cooker (or a bowl covered with a paper towel with a little water for 6 minutes or until tender.
Drain and transfer to a food processor or blender
Process until smooth
Add the garlic, sugar, soy sauce and oregano and process until blended.
Transfer to a serving bowl and stir in yogurt mixture. Chill at least one hour before serving
Serving Size: Makes 6 servings
