Ingredients
1 medium eggplant 1/2 inch dice2 medium zucchini 1/2 inch dice1 large onion 1/2 inch dice1 28 on diced tomato can1 tbsp basil2 bay leaves1 tsp olive oilsalt and pepper
Directions
dice all vegetables, put in an oven dish, add tomatoes and seasonnings. cook for 2 hrs at 350. Stir once.
