Quinoa Summer Salad

1 cup dry Quinoa2 cobs fresh Sweet Corn, about 1.33 cup 1 cup shredded Yellow Summer Squash 1/4 cup sliced Almonds1/4 cup Ricotta, Part Skim 6 Cherry Tomatoes, sliced2Tbs. chopped fresh mint
Cook corn about 20 minutes, and cool in ice water.
Cook quinoa about 15 minutes, drain and cool.
Slice tomatoes, chop mint, and shred summer squash. Remove corn from cob, combine ingredients, chill before serving.
