2 t. olive oil1 T. Butter, unsalted2 medium red potatoes, 2 1/4 - 3 1/4 " dia., diced2 roma tomatoes, diced1 med. onion, diced1 med. baby zucchini, diced1/2 c. mushrooms, sliced1/2 c. diced green pepper, diced2 cloves garlic, minced about 1/2 c. lean ham, dicedsalt and pepper to tastea couple dashes of Emeril Essence2 med. eggs, prepared however you like
Heat oil in skillet, add potatoes, onions, and zucchini. Cook on med. until potatoes are tender. ( I cover it for a good 10 min stirring ocassionally). Then add ham, peppers, mushrooms, cook 2 -3 minutes. Add tomatoes, garlic, Essence, salt and pepper, and cook 1 -2 minutes. Top with an egg cooked to your liking.
