Grilled Garlic-Soy-Sherry Pork Chops

1/4 t. black pepper1 T. sherry1 T. reduced sodium soy sauce2 T. reduced sodium chicken broth1 T. maple syrup or honey1/2 t. dijon mustard1/2 t. paprika2 cloves of garlic, smashed or minced4 boneless pork loin chops (around 4 oz. each), trimmed of all visible fat
Combine first 8 ingredients and set aside. Pound each chop to about 1/3 inch thickness. Put chops and marinade in plastic bag and turn to coat. Marinate for 30 to 60 minutes. When ready to cook, remove chops and pat dry with paper towels. Discard marinade and bag. Grill chops over medium heat, taking care not to over-cook. At this thickness, they will cook pretty quickly, so just a few minutes on each side. Allow to rest before serving.
