Lentil Salad

Ingredients
1 C. dry lentils (green/brown)1/2 bell pepper1 celery stalk1/2 medium onion2 T chopped cilantro2 T. rice vinegar or red wine vinegarOptional ingredients: 2 T. red wine vinegarsalt & pepper to taste
Directions
Cook lentils until just tender. Drain any excess water. Cool lentils while preparing other ingredients. Finely chop bell pepper, celery, onion, and cilantro. Gently mix all ingredients including lentils in a medium sized bowl. Add rice vinegar or red wine vinegar. Add salt and pepper to taste (optional). Chill for at least 30 min. before serving.
