White Bean and Vegetable Ragout

Ingredients
Onions, raw, 1 medium (2-1/2" dia)Green Peppers (bell peppers), 0.25 cup, chopped Garlic, 1 clove Olive Oil, 1 tbsp Zucchini, 2 cup, sliced Summer Squash, 1.5 cup, sliced )Red Ripe Tomatoes, 1 medium whole (2-3/5" dia) Spinach, fresh, 1 cup Beans, white, 1.5 cup
Directions
Saute onion, pepper and garlic in olive oil until soft. Add remaining ingredients and simmer together until heated through and flavors blend.
