3 average chicken breasts (boneless & skinless)5 large mushrooms (diced)1 small onion (diced)5 to 6 cups of fresh spinach (shredded)3 tbsp feta cheeseolive oilsalt and pepper
Dice mushrooms and onion, cut spinach in a shred style. Mix together in a bowl drizzle about a couple of teaspoons of olive oil on it and mix well. Lay out the chicken breasts flat (if they are thick you may need to pound them flat), put a third of the mixture in each chicken breast. Sprinkle a tablespoon of feta cheese on top of the mixture in chicken. Close chicken by pinning, tying, or you own method. Sprinkle salt and pepper (to taste) on chicken. Bake in a 350 degree oven for 20-30 minutes or until chicken is done. This is my husbands recipe and it it delicious and very healthy!!!!
