Lemon Garlic Roast Potatoes

Vegetable cooking spray1 3/4 lbs. baking potatoes, cut into 1" chunksJuice of one lemon1 tbl. olive oil1/2 tsp. salt3 tbl. minced garlic
Preheat oven to 425 degrees.
Spray an 11x13 pan with cooking spray.
Combine remaining ingredients in a bowl; toss well to coat potato chunks thoroughly. Let mixture stand for 10 mins. Spoon mixture into the prepared pan. Bake 35 mins. or until tender and lightly browned, stirring occasionally.
Makes four generous servings.
