2 ½ cups blanched almond flour or almond mill½ teaspoon salt1 teaspoon baking soda1 teaspoon cinnamon, ground¼ teaspoon cloves, ground½ cup honey¼ cup grapeseed oil2 eggs½ cup raisins (or other dried fruit)
Brew coffee, set aside and let cool. In a large bowl combine almond flour, salt, baking soda, cinnamon and cloves. In a separate bowl, combine agave, oil, eggs and coffee. Mix wet ingredients into dry with hand mixer, then stir in raisins (can also use nuts or any dried fruit). Grease and flour a 9-inch cake pan or muffin pan, pour batter evenly into pan. Bake at 350° for 30-35 minutes. For muffins, remove and let cool on a cooling rack.
