French Beef Stew

Ingredients
1.6 lbs Choice Top Round Steak1 cup red wine1/2 c. waterlarge onion1 c. carrots8 oz. sliced mushrooms2 tsp. dried thyme2 tsp. salt2 tsp. black pepper2 c. Beef Stock
Directions
Thinly slice onion and set aside. Mix flour and 1 tsp each of salt, pepper, and thyme in shallow bowl. Heat olive oil in skillet over medium heat. Cube beef and dredge in flour mixture, then brown in skillet. Place meat in bottom of crock pot. Dredge sliced onion in flour mixture and brown in skillet until onion becomes light brown. Add wine and allow to cook for 5 minutes until reduced. Add onion to crock pot and top with carrots and the other half of the seasonings. Add 1/2 cup water and allow to cook for 8-10 hours without opening the lid. With 3 hours left, add beef stock as necessary to keep from drying out and mushrooms.
