Watermelon, broccoli, pear and almond salad

4 cups red leaf lettuce 20 (2-inch) cubes of watermelon, seeded, drained2 Bartlett pears, peeled, cut bite-size20 bite-size broccoli florets2 tablespoons Honey-roasted Almond accentsDressing Ingredients¼ olive oil2 Tbsp apple cider vinegar1 Tbsp sugar/Stevia¼ tsp Cajun seasoning1 tsp mustard½ tsp lemon zest
1. Bring to small pot of water to a boil. Blanch broccoli for 3 minutes, set aside to cool.
2. Arrange lettuce on 4 luncheon plates. Plates watermelon, pears, and broccoli florets among leaves. Sprinkle with almonds.
3. Combine dressing ingredients in small Mason jar with lid. Shake to combine ingredients.
4. Drizzle dressing atop salad.
