2 slices day old bread (about 1/4 lb)1 cucumber, peeled, and cut up (350 gr)1/2 red bell pepper, cut up1/2 green bell pepper, cut up2 cloves garlic, cut up3 T olive oil1/4 c red wine vinegar2 drops Tabasco sauce1 t sugar1 t saltpepper5 or 6 ripe tomatoes (2 lbs), peeled and cut up
In a flat dish, soak bread in cold water for 1 min. Squeeze out excess water.
Blend cucumber, bell peppers, garlic, oil, vinegar, Tabasco, sugar, salt. Then add 1/2 soaked bread and blend until smooth.
Transfer mixture to a bowl. Blend tomatoes and remaining bread. Transfer to the bowl and mix the two. Refrigerate several hours.
Serving Size: makes 3 @ 2 cups
