Canadian Cheddar Cheese Soup

1 pound bacon1 large red onion1 stick butter6 stalks celery2 cups flour6 cups chicken stock8 cups milk2 lbs white sharp cheddar cheese, grated16 oz warm canadian beer2 tbsp tabasco sauce
Fry bacon in large soup pot. Once it is done add the butter, onion and celery. Saute until the vegetables are limp. Stir in flour until mixture is lumpy. Whisk in chicken stock until mixture is smooth. Let simmer 15 minutes. Add milk and simmer for 10 more minutes. Stir often and DO NOT let mixture boil. Stir in cheese. Mix until all cheese is melted. Let simmer for 10 minutes. DO NOT overheat. Mix in beer and tabasco sauce.
