Baked Rice with Broth

1 medium onion, chopped1 TBS butter1 cup jasmine rice2 cups beef broth.
Preheat oven to 350F
In an ovenproof, lidded casserole, melt butter over medium heat. Add onions and saute until translucent. Add rice, stirring to coat. Add broth. Bring to a boil.
Place lid on dish and place in oven. Bake for 20-25 minutes or until liquid is absorbed.
Serving Size: Makes 4 servings
