German semolina dumplings

3/4 l milk 2%20 g butter (unsalted)1 tsp salt1 tsp lemon peel (or 2 drops of lemon oil)250 g semolina2 eggs1 tsp salt for the cooking water
add milk, butter, lemon peel, salt in a pot and bring to boil
take pot from the stove and stir semolina slowly into the milk
put pot on low heat and stir for about 1 minute till you get one big dough ball
give hot semolina into a bowl and mix the eggs quickly into it
let the dough coole down
form dumblings (16)
bring in a big pot some salt water to boil
add dumplings into the water keep the temp. just under boiling (10 minutes) dumplings will float when they are done.
Germans add on top 30g butter roasted together with 20 g of breadcrumbs and seve it with canned or fresh fruit
Serving Size: makes 4 servings
