Introduction
this is a really easy recipe that doesn't take too many ingredients and is a really tasty Sunday morning brunch. It does, however, require a cast iron skillet. this is a really easy recipe that doesn't take too many ingredients and is a really tasty Sunday morning brunch. Ingredients
-
2 Tbsp butter
3 eggs
3/4 cup milk
3/4 cup flour
about 5 cups of mixed berries, i use the frozen mix from costco,
Directions
preheat oven to 375 degrees.
melt butter in a 9 inch cast iron skillet
combine milk, eggs, and flour in a blender and blend until smooth, then pour over melted butter (try to start on the edges so not too much butter ends up on top the the egg mixture). put the skillet in the oven and LEAVE IT ALONE for at least 15 minutes. it is sort of a souffle so if you look in on it, it will fall in a weird shape.
remove it from the oven, it should look fully cooked (not shiny unless there is some butter that got on top) and be puffed about an inch above the pan (less if you live in high altitude).
sprinkle berries so all but the edges are covered.
you can top with powdered sugar if you want or just serve it how it is.
