Introduction

Much like Banana Bread. You can substitute for whole grain flour, or stevia/raw sugar, etc. This is the original recipe my mom makes. I play with it from time to time. Ingredients

    Dry Ingredients:
    1.5 cup flour
    1 tsp baking powder and soda
    1 tbs cinnamon

    Wet:
    .5 cup oil
    2 eggs
    3/4 cup honey or sugar
    1tbs vanilla
    juice and zest of one lemon

    1 cup grated zucchini (about 1 medium)
    1/5 cup chopped nuts of choice

Directions

Mix all wet ingredients together.

Mix all dry ingredients. Add zucchini and nuts to the dry mixture to prevent them from sinking to the bottom while baking.

Add dry to wet, stir well and pour into a greased pan. Bake for 1.5 hours at 350.

    Yum! I've been looking for a good Vegan Zucchini bread recipe. I will use agave nectar and a banana in place of the sugar and eggs. Thanks! - 2/14/09

    I have since really improved this recipe. I no longer use any sugar or sugar substitute at all. I add cranberries and golden raisins and ground flax and sunflower seeds as well. It is so much better without the sugar and with the tangy cranberries. I hope you like it.
